Cottage cheese flatbread pepperoni pizza
A keto option that's almost as good as the glutenous version
Ingredients:
- 2 cups cottage cheese (drained)
- 2 large eggs
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- Pepperoni slices (as many as you like)
- Keto pizza sauce (recipe coming)
Instructions:
Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Prepare the Dough:
- In a food processor, blend the drained cottage cheese until smooth.
- In a mixing bowl, combine the blended cottage cheese, eggs, garlic powder, dried oregano, salt, and black pepper. Mix until well combined.
Shape and Bake:
- Spread the mixture evenly onto the prepared baking sheet to form a flatbread shape.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the center is set.
- Remove from the oven and flip the bread by lifting from a corner. Careful: It will be hot!
- Bake for another 5 minutes and remove pizza base from oven.
Add the Sauce:
- Spread an even layer of pizza sauce over the dough, leaving about 1 inch around the edges for the crust. Use a ladle or spoon to distribute the sauce.
Add the Cheese:
- Sprinkle a generous amount of shredded mozzarella cheese over the sauce. Ensure even coverage but avoid overloading, as too much cheese can make the pizza soggy.
Arrange the Pepperoni:
- Place the pepperoni slices evenly over the cheese. Start from the outer edge and work your way towards the center, slightly overlapping the slices if necessary. This ensures that each slice of pizza will have a good amount of pepperoni.
- For a fuller coverage, you can add more pepperoni in a second layer, alternating the slices between the gaps of the first layer.
Optional: Add Additional Toppings:
- If you’re adding other toppings like olives, mushrooms, bell peppers, or onions, distribute them evenly over the pizza at this stage. Be careful not to overload the pizza, as it can affect the cooking time and texture.
Bake the Pizza:
- Place the pizza in the preheated oven and bake according to the dough instructions, usually about 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Finish and Serve:
- Remove the pizza from the oven and let it cool for a couple of minutes before slicing. This helps the cheese set slightly, making it easier to cut and serve.
